Hotels in the Aude
Sometimes you want a luxury hotel and sometimes basic accommodation is the right choice. You can find either in the south of France, and everything in between.
For pure luxury in Carcassonne there's the Hotel de la Cite. mmmm - NICE.
Logis de France lists small independent hotels, rated one to 3 stars. Many have restaurants and they are usually good. In smaller towns and villages the hotels close in the winter so be sure and check the dates.
One of my favourite restaurants is the Clos des Souquets in Fabrezan, a Logis de France hotel.
